Happy St. Patrick's Day!
Feeling LUCKY!
We sat down for our St.
Patrick's Day dinner at the incredible petrified wood table. The rings of age
alone can mesmerize me for days. The table was sprinkled with mint chocolate
cupcakes from our favorite local bakery SweetCakes. Pure white Gerber daisies,
green poofs and tiny pink flowers on what looked like a rosemary sprig sprung
out of the dark Guinness Bottle vases. The kitchen was full of rich flavors
making our mouths water from the moment we walked in the door. The boys told
tales from their day at the auto show that confirmed this memory will far out
weigh the consequences of missing a few hours of school. Snow was whiting out
the lake just a few yards away as huge snowflake fell from the sky. Lond got to
sit in a one of a kind Lamborghini and they make the highlight real of the
Denver Auto Show. Jess had a refreshing day with out her phone. I caught up on
laundry and had a ‘me too’ moment while cutting fat off of a chicken thigh.
There is fat all over chicken thighs. This is a complete side note, but I need
to have a conversation with someone who eats chicken thigh often. Do you eat
all the lard on there? That grosses me out! I spent hours trimming chicken
thighs for dinner tomorrow and decided it's breast from here on out. How do you
do it? Anyway we had an incredible meal together. Together, that's the key
word.
